Ingredients
- 1 lb. boneless, skinless chicken breasts
- 2 tbsp. Olive oil
- 1 tsp. Italian seasoning
- 1 tsp. Garlic powder
- ½ tsp. Salt
- ½ tsp. Black pepper
- 2 medium Roma tomatoes, sliced
- 3 oz. whole milk mozzarella cheese, sliced
- 2 tbsp. Balsamic vinegar
- 8–10 fresh basil leaves
Instructions
- Preheat your oven to 400F.
- Lay your chicken on a plate or a clean cutting board and coat them with the olive oil and dried seasonings. Place the chicken in a cooking dish and put them in the oven for 15 minutes.
- Remove the chicken and place 2 slices of the tomatoes on each piece of chicken. Place the dish back in the oven for 10 minutes.
- Remove the dish a third time and place a thin slice of mozzarella over each tomato and chicken breast and place the dish back in the oven for 8 minutes.
- Remove the dish and drizzle your balsamic vinegar over each chicken breast and add torn basil to the top of your dish before serving. You can also chiffonade the basil for fun spirals like I did!
