Valentines Cake Pops

These delicious little cake pop bites make the perfect Valentine’s Day treat whether you’re cooking up something for a special someone, or sharing with a crowd.

Ingredients

½ cup almond flour
¼ cup coconut flour
¼ teaspoon baking powder
1 scoop Perfect Keto Vanilla Collagen
2 tablespoons powdered swerve
2 tablespoons melted butter, cooled to room temperature
2 eggs
¼ cup unsweetened almond milk

Frosting:

2 ounces grass-fed cream cheese
3 tablespoons grass-fed butter
¼ cup powdered swerve (optional*)
2 teaspoons non-alcoholic vanilla extract

Icing:

28 grams melted keto-friendly dark chocolate, melted

additional/optional topping:

keto-friendly sprinkles

Instructions

Preheat oven to 375 F.
In a large bowl, mix together the first four ingredients and set aside.
In a medium-sized bowl, mix together the melted butter, eggs, and almond milk.
Add the wet ingredients to the dry ingredients, mixing to combine
On a baking sheet lined with parchment paper, spread the batter so it’s about 2 centimeters thick and bake for 15 minutes or until easily pierced with a toothpick.
While the cake is cooling, whip together the cream cheese, butter, sweetener, and vanilla flavoring.
Once the cake has cooled, crumble it into a large bowl.
Using a hand mixer, mix in the cream cheese mixture, being careful not to add too much (the frosting acts as a glue, so mixture should be cake-like still).
Use a cookie scoop to scoop the batter, roll into a ball, and place it on a baking sheet lined with parchment paper, and chill for 20 minutes.
While the cake balls are chilling, whip together the icing.
Use a lollipop stick to stick into the flat end of the cake ball, dunk the cake ball into frosting mixture, cover in sugar-free sprinkles, and chill for an additional 10 minutes.
